Octopus
Octopus vulgaris, known as the common octopus, has delicious flesh that is prized in cuisines around the world. It is often described as subtly salty and slightly sweet, with a texture that is tender yet slightly firm.
Octopus is versatile in the kitchen: it can be grilled, boiled, fried, or even eaten raw in dishes such as octopus carpaccio. It is instantly recognisable by its body: a large head, called the mantle, from which eight long, supple arms lined with suckers extend.
